Fabrication Process
The Beef Meaty Neckbones are a bone-in chuck portion prepared from Beef Natural USDA Prime, Choice and Select graded carcass. The cut does not have an approximate NAMP/IMPS equivalent. This item consists of the neck bones and the meat and lean content between the different processes, produced by a V-cut in the process of removing bones from a chuck primal. The lean shall be flush with bone tips such that the bones remain unexposed.
