Fabrication Process
The Beef Oxtail is collected from the carcass portion of the Beef naturally raised steer. The processing procedures include through rinsing and cleaning of the oxtail to assure removal of residual stains or matter. The oxtail is rinsed and racked for thorough chilling there is minimal fat trimming on the head portion of this product. After chilling the oxtail is removed from the rack, cut into portions between the segments and vacuum packed.
